I am a full-time working mom, have been married for 21 years, and have five children. My oldest is a girl; she is away at college. My boys are all in school sports, and anybody who knows having kids in sports takes up a lot of time. That’s one of the many reasons that most of my recipes can be made in a short amount of time. Because you have those late games and practices, fast food with a family of 7 can be expensive.
Where did the name Semi Scratched come from?
I have always strived to cook from scratch, but it can be nearly impossible with a big family and working full-time. So, my cooking is semi-scratch. I incorporate packaged ingredients that typically can be made from scratch, but I purchase them to save time. That is how the name came about.
What type of recipes will I find here?
Here, you will find not-so-traditional Mexican dishes to which I add my spin and American dishes to which I add my spin.
