It has started getting cold here, I know not as cold as other places. But here in Southern California once it hits 60 degrees we are bringing out our sweaters. And with our sweaters on, I start making soup.
What’s great about soup? Is that you don’t have to be exact with your measurements. You can add just about anything, it’s very flexible.
When I ever would go out to eat (which is VERY rare) and see broccoli cheddar soup on the menu, it wouldn’t appeal to me. And I love soup, any kind of soup I am there. But once I began making it myself, I’m in love with this soup.
As you see here the broccoli, when you chop the broccoli it does not have to be perfect just give it a ruff chop into small pieces.

Let’s start making Broccoli Cheddar Soup
- Before starting have ingredients ready.
- In a 5-7 quart pot over medium heat, melt butter.
- Once the butter has melted; stir in flour, continuously stir for 2-3 mins.
- Pour milk into the pot, continuously stir for 5-7 mins until it thickens.
- Once it has thickened add broth, continuously stir for 2-3 mins.
- Bring to a boil, then add your broccoli, carrots, salt, and pepper.
- Bring down to a simmer, simmer for 20-25 mins; until veggies are tender.
- Once done add cheese; mix until all is melted through.
- Taste and adjust salt and pepper if needed.

- 1/4 cup unsalted butter (or 4 tablespoons )
- 1/4 cup flour
- 3 cups milk
- 3 cups chicken broth (or veggie, beef, or water)
- 3 cups chopped broccoli crowns (or 2 broccoli crown heads, chopped)
- 2 cups matchstick carrots
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 cups shredded cheddar cheese
Instructions
