Description

Here is my version of Broccoli Cheddar Soup, creamy, savory, cheesy, and super easy to make. It will make your family ask for more.


Ingredients

Units Scale
  • 1/4 cup unsalted butter (or 4 tablespoons )
  • 1/4 cup flour
  • 3 cups milk
  • 3 cups chicken broth (or veggie, beef, or water)
  • 3 cups chopped broccoli crowns (or 2 broccoli crown heads, chopped)
  • 2 cups matchstick carrots
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups shredded cheddar cheese


Instructions

  1. In a 5-7 quart pot over medium heat, melt butter.
  2. Once the butter has melted; stir in flour, continuously stir for 2-3 mins.
  3. Pour milk into the pot, continuously stir for 5-7 mins until it thickens.
  4. Once it has thickened add broth, continuously stir for 2-3 mins.
  5. Bring to a boil, then add your broccoli, carrots, salt, and pepper.
  6. Bring down to a simmer, simmer for 20-25 mins; until veggies are tender.
  7. Once done add cheese; mix until all is melted through.
  8. Taste and adjust salt and pepper if needed.
