Coconut Milk and Berry Popsicles

Time for ice cream, popsicles, ice teas and anything that’s cold. Last year I bought a 5 cu ft chest freezer in hopes of filling it with pre made meals to have during the summer. I was so exicted to have my cook-a-thon (as I called it) to make hamburgers, muffins, cookies, breads, chili, different kinds of beans and so forth and so forth. I had my lists ready but time just past me and had no time to do all the things I wanted to do.

So what ended up happening was the freezer got full of ice cream by my husband. Each time we would go to the store here comes a differnt box of ice cream.

This year I am going to execute my plan of making them plenty of popsicles. Here is one that I’ve been making for the kids and they absoulty love them.

  • Dairy free
  • Naturally sweeten
  • Easy


Coconut milk and Berry Popsicles

Ingredients

  • 1 can of coconut milk
  • 1/2 cup frozen berries
  • 3 tablespoons of agave

Instructions

  1. In a blender blend coconut milk, mixed berries and agave.
  2. Pour into popsicle molds.
  3. Freeze for 6 to 8 hours or overnight.
  4. When done let them set out for a few mintues to melt just a little so it’s easier to wiggle out.
