Description

Easy Cinnamon Oatmeal Muffins require minimal ingredients. They are fluffy, perfectly sweetened, super easy to make. Healthy without tasting healthy.

Ingredients

Units Scale
  • 1 1/2 cup all-purpose flour
  • 1 cup rolling oats
  • 3/4 cup sugar
  • 3 teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/2 teaspoon ground cinnamon
  • 2 eggs (room temperature )
  • 1 cup milk (room temperature )
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 2 tablespoon sugar (for topping the muffins)
  • 1 teaspoon ground cinnamon (for topping the muffins)

Instructions

  1. Preheat the oven to 375 degrees, line your muffin tins with muffin liners, and set them aside.
  2. Place all-purpose flour, rolling oats, sugar, baking powder, salt, and ground cinnamon; mix well and set aside.
  3. In another medium bowl, place eggs, milk, butter, and vanilla extract; mix well.
  4. Add flour mixture to the milk mixture a little at a time; mix until combined, careful not to over-mix. Let the batter rest for about 5 minutes before pouring.
  5. Fill your muffin tins with the muffin batter; fill the muffin tin all the way to the top. (I like to fill mine all the way to the top)
  6. In a small bowl, place sugar and ground cinnamon; mix well. Sprinkle the muffins with this mixture.
  7. Place muffins into the preheat oven and bake for 20 minutes until a toothpick comes out clean.
