Description
Here is a quick breakfast option, Easy Spinach, and Eggs with Parmesan Cheese. You have your vegetable and protein with the cheese giving it the extra goodness.

- 4 cups spinach (loosely packed )
- 4 large eggs
- salt (to taste )
- black pepper (to taste)
- 2 tablespoon shredded parmesan cheese
Instructions
- In a medium pan over low to medium heat, place a little oil, then place spinach. Allow the spinach to wilt a little about 2-3 minutes.
- Begin making four small wells in the spinach; crack an egg in each well then season with salt and pepper.
- Cook for about 5 minutes until the white part of the egg is cooked. It will go from transparent to a soild white. If you like your eggs to be fully cooked from the inside, cover the pan with a lid. That way it will cook completely from inside.Â
- Once it’s done divide into four equal portions, the spinach with the egg, and sprinkle 1/2 a tablespoon of parmesan cheese on each egg.
