Description

Easy Zucchini and Corn, is easy and can be made in less than 15 minutes. The zucchini gives it a bit of a crunch, the corn is sweet, the tomatoes give it that tang, and the cheese well who does not love cheese.


Ingredients

  • 34 medium zucchinis, cubed
  • 1 15 oz can corn, drained
  • 1 15 oz can fire-roasted tomatoes, drained
  • 1 teaspoon salt
  • 1 cup shredded mozzarella cheese


Instructions

  1. In a medium pan over medium-high heat, saute zucchini for about 3 minutes, no need to add any oil the zucchini's release plenty of water.
  2. Cover zucchini for about 2 minutes, so the zucchini can release its water.
  3. Then add corn, fire-roasted tomatoes, and salt; mix and cover for 3-4 minutes.
  4. Once heated through, add mozzarella cheese; give it a mix for the cheese to be well incorporated and melted.

Notes

  • Be careful to not overcook your zucchini, you still want it to have a bit of a crunch.
  • This dish can be paired with white rice or can eat it on its own.
