Description

These Ground Turkey Stuffed Bell Peppers are easy to make but full of flavor. The cooked bell peppers are sweet, the ground turkey with the pasta and beans is savory and filling.


Ingredients

  • 6 medium bell peppers (any color bell pepper of your choice)
  • 1 pound ground turkey
  • salt (to taste )
  • black pepper (to taste)
  • 1 1/2 cup broth (any type of broth of your choice)
  • 3/4 cup pasta orzo
  • 1 15 oz can black beans
  • 2 tablespoon panko (or bread crumbs )
  • 1 tablespoon fresh chopped parsley (or 1 teaspoon dried parsley)


Instructions

  1. Preheat oven to 400 degrees.
  2. Cut the tops off the bell pepper, and then remove seeds.
  3. Place clean bell peppers in a 13×9 baking dish, bake for 15 minutes.
  4. In a medium pan, add a little oil, season ground turkey with salt and pepper, cook for 3-5 minutes until no longer pink. Remove any excess liquid from the ground turkey.
  5. Add broth and pasta orzo to the ground turkey; mix and bring to a boil, then down to a simmer and cover for 15 minutes until pasta has cooked.
  6. In a small bowl, place panko and parsley; mix well and set aside.
  7. Once the pasta has cooked, turn the stove off and add the black beans; mix well.
  8. Begin filling the bell peppers to the top. Top the bell peppers with the panko mix. Place bell peppers back into the baking sheet and bake for 15 minutes until the tops begin to turn brown.

Notes

  • These bell peppers are cooked on the crunchy side. If you like your bell peppers more cooked, on the first bake, bake for an extra 10 minutes.
  • When choosing your bell peppers, make sure they can stand. It makes it easier to fill without them tipping over.
