Chorizo con Huevo is a traditional Mexican breakfast dish of scrambled eggs with chorizo sausage. It is a great, quick breakfast that can be made any day of the week.Â
Ingredients
2 tablespoon oil
8 large eggs
10 oz longanIza (or any chorizo of your choice)
Instructions
- Â Add eggs to a medium bowl, whisk with a fork until well mixed and yellow in color, and set aside.

Heat oil in a large skillet over medium to high heat. Once the skillet is hot, add longaniza by hand, breaking it apart. Use a spatula or cooking spoon to continue breaking apart. Cook until the chorizo has changed from orange to a darker brown. The texture will appear like ground beef, and it is heated for about 5-10 minutes.Â
- Reduce the heat to medium, then add your scrambled eggs to the cooked longaniza for 6-8 minutes. Cook slowly and move around until the eggs are cooked to your desire. You know they are cooked when they are no longer runny.Â
