How is everyone doing with this quarantine? Have you been cooking more? Trying new recipes? or still trying to figure out your groove in the kitchen? I feel like I’m finding my groove in my kitchen. It is definitely a great feeling figuring out how to be creative in the kitchen without getting out of your family’s comfort zone. Because you know when you do, your family is the first judge.
Chicken is really not a big winner here at our household. So that means I really have to come up with a really good recipe for my family to eat chicken.
So far this one has been a winner and what is great is that it’s super easy to make. For this recipe I like to use chicken tenders because they cook quickly and it makes for a great weeknight meal.
Here in the above picture is the marinade for the chicken tenders.
In this picture is the chicken tenders in the marinade. I feel it is best to marinade overnight but if you don’t have the time at least an hour would be good.
Let’s start making Lemon and Pepper Chicken Tenders
- In a bowl or a ziplock bag pour lemon juice, olive oil or any oil of your choice, black pepper, salt and chicken tenders.
- Let marinate overnight or at least an hour.
- In a skillet pan heat up to medium heat and cook chicken until fully cooked, flipping only once.
- Pair up chicken tenders with white rice and roasted veggies.

- 1 lb chicken tenders
- 1/2 cup lemon juice
- 1/4 cup olive oil (or any oil of choice )
- 1 1/2 teaspoon black pepper
- 1 teaspoon salt
Instructions
- In a bowl or zip lock bag add lemon juice, olive oil, black pepper, salt and chicken tenders.
- Let marinate overnight or at least an hour.
