- 1 lb raw uncooked shrimp
- 2 medium cucumbers, peeled and diced
- 1 medium onion, diced
- 1/2 cup chopped cilantro
- 32 oz vegetable juice
Instructions
- In a medium pot over high heat, place shrimp and cover completely with water; bring to a boil then to a simmer; once the shrimp begins to turn orange, the shrimps are done.
- Place cooked shrimp in a colander and run the shrimp under cold water to stop the cooking.
- Begin peeling the shell off the shrimp; once peeled, dice the shrimp into small pieces.
- In a medium bowl, place chopped shrimp, diced cucumber, diced onion, diced cilantro, and vegetable juice; mix well.
