Description

This One Pot Sausage and Rice is made in under 40 minutes. The sausage is the hit of this meal, with the vegetables giving it a sweet and savory taste.


Ingredients

Units Scale
  • 2 tablespoons oil (any neutral oil will work )
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 1 pound Italian sausage (or use your favorite sausage )
  • 2 cups white long grain rice
  • 4 cups beef broth (or any broth you like or have on hand )
  • fresh parsley, chopped ( for garnish )


Instructions

  1. In a 4-quart pot, heat oil on medium to high heat. Place onion and carrots, and sautee for 3-5 minutes until they become translucent.
  2. Then add your sausage to the pot, and cook until no longer pink, about 5-10 minutes.
  3. Add the rice; mix well.
  4. Add the beef broth; mix well and bring to a boil and then to a simmer. Cover and cook for 20-25 minutes until rice is fully cooked.
  5. When it's done, serve it with chopped parsley.

Notes

  • The remaining sausage and rice can be put in an airtight container and in the refrigerator for up to 3-5 days.
  • You can re-heat over the stovetop in a pot by adding a little bit of water, about one tablespoon, to a cup of the sausage and rice.
