Description

This Pumpkin Banana Muffin Recipe is moist, fluffy, not too sweet, and it's here just in time for pumpkin season. What is awesome about this recipe is that you can use this batter for muffins and make bread.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin spice
  • 1 teaspoon cinnamon
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1 cup mashed banana (or 2-3 medium bananas mashed )
  • 1 cup pumpkin puree
  • 2 eggs
  • 1/2 cup butter, melted, or 1 stick melted


Instructions

  1. Pre-heat oven to 350 degrees. Line your muffin tins or bread pan and set it aside.[adjustable][/adjustable]
  2. Place flour, baking soda, baking powder, salt, pumpkin spice, cinnamon, sugar, and brown sugar in a medium bowl; mix well and set it aside.[adjustable][/adjustable]
  3. In another medium bowl, place mashed banana, pumpkin puree, eggs, and melted butter; mix well.[adjustable][/adjustable]
  4. Mix flour mixture into the banana mixture, a little at a time, and do not over mix. The batter will look lumpy.[adjustable][/adjustable]
  5. Fill prepared muffin tins ¾ of the way or pour batter into a 9×5 bread pan. [adjustable][/adjustable]
  6. Place muffins or bread into the oven. If you are making muffins bake for 20-25 minutes. Suppose you are making bread bake for 50-60 minutes. [adjustable][/adjustable]
