Description

These Pumpkin Oatmeal Bars are soft, moist, and perfectly sweetened. They are made with simple ingredients that many have on hand.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup rolling oats
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 1 teaspoon pumpkin spice
  • 1 teaspoon ground cinnamon
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 2 eggs
  • 1/4 cup unsalted butter, melted (you can use salted butter as well)
  • 1/4 cup oil (any neutral oil )


Instructions

  1. Preheat the oven to 375 degrees. Grease or line your 8 x 8-inch pan with parchment paper and set aside.
  2. In a medium bowl, place flour, rolling oats, baking powder, salt, sugar, pumpkin spice, and ground cinnamon; mix and set aside.
  3. In a different medium bowl, place pumpkin puree, eggs, melted butter, and oil; mix well.
  4. Slowly add the dry ingredients into the wet ingredients; mix well.
  5. Place the mixture into your prepared pan, and place the pan into your preheated oven for 25-30 minutes until the toothpick comes out clean.
