- 1 cup all-purpose flour
- 1 cup rolling oats
- 2 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup sugar
- 1 teaspoon pumpkin spice
- 1 teaspoon ground cinnamon
- 1 cup pumpkin puree (not pumpkin pie filling)
- 2 eggs
- 1/4 cup unsalted butter, melted (you can use salted butter as well)
- 1/4 cup oil (any neutral oil )
Instructions
- Preheat the oven to 375 degrees. Grease or line your 8 x 8-inch pan with parchment paper and set aside.
- In a medium bowl, place flour, rolling oats, baking powder, salt, sugar, pumpkin spice, and ground cinnamon; mix and set aside.
- In a different medium bowl, place pumpkin puree, eggs, melted butter, and oil; mix well.
- Slowly add the dry ingredients into the wet ingredients; mix well.
- Place the mixture into your prepared pan, and place the pan into your preheated oven for 25-30 minutes until the toothpick comes out clean.
