These Shredded Beef Tostadas will make a great weeknight dinner. Instead of taco Tuesday, how about tostada Tuesday? Everyone will love it.

- 1 15 oz can refried pinto beans
- 2 cups shredded beef
- 1/2 head iceberg lettuce, shredded and washed
- 1/2 cup queso fresco (or any type of shredded cheese of your choice )
- salsa or hot sauce (for topping )
- 6 tostadas
Instructions
- In a 2-quart pot, place refried beans and heat through.
- If needed, In another 2-quart pot, place shredded beef and heat through.
- It is time to assemble, grab one tostada, smear a thin layer of refried pinto beans, add shredded beef, shredded lettuce, queso fresco, or any shredded cheese, and salsa or hot sauce.
