Tomaillo Green Salsa

Description

This Tomatillo Green Salsa is super simple to make. It’s a bit tangy from the tomatillos and a bit spicy from the serrano chilies. It goes great on top of just about anything.


Ingredients

Scale

3 cups water

1 pound fresh tomatillos

2-3 fresh serrano peppers

3 garlic cloves

Small piece of onion

Small handful of cilantro

1-2 teaspoons salt


Instructions

  1. Being by removing the husks from the tomatillos. You will see that the tomatillos are a bit sticky, then rinse the tomatillos to remove the stickiness. Cut the stems of the serrano chiles and rinse.
  2. In a 2-quart pot over medium to high heat, place water and bring to a boil. Then add the peeled tomatillos and serrano peppers; boil for 5-10 minutes until the tomatillos and serranos are soft and have turned slightly pale in color.
  3. Once the tomatillos and serranos are cooked, place them into a blender or food processor, then add garlic, onion, cilantro, and salt 1 teaspoon at a time. Blend for a few seconds; taste and adjust the salt to your liking.

Notes

Any remaining salsa can be placed in an airtight container and placed in the refrigerator for up to 2-3 weeks.
