These bean burgers are SO good and super easy to make.
At first, making veggies burgers was a bit intimidating, I think what it was is I over thought the process. Once I figured out how to make them there was no turning back.
What I love about veggie burgers or bean burgers whatever you want call them, is they are so versatile the possibilities are endless. You can use any vegetables you have on hand and just add your favorite spices.
My kids really liked these burgers, its a win win for me they get to eat there vegetables without them realizing it and it doesn’t break the bank to make them.
Black Bean and Garbanzo Bean Burgers
Pre-heat 375 degrees
Ingredients
- 1 15oz can black beans
- 1 15oz can garbanzo beans
- 1/2 cup corn
- 1 cup diced onion
- 1 cup diced carrots
- 1 cup bread crumbs
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 1/2 teaspoon garlic powder
- 1 teaspoon black pepper
- 1/4 cup water (more if needed)
Directions
- In a pan with a little oil sauté onion and carrots for 2-3 mins, just until a bit translucent. Set aside
- In a bowl mix bread crumbs, salt, paprika, garlic powder and black pepper. Set aside.
- In a food processor add black beans and garbanzo beans, pulse until mixed, don’t over mix you still want some beans to stay whole.
- In the bowl with the bread crumbs add your sauté onions and carrots, beans, corn and water. Mix well.
- Form in patties any size you choose place on to cookies sheets.
- Bake for 15 mins turn over and bake for another 15 mins.
- If you don’t like the corn whole, you can mix it with the beans in the food processor.
