Need a quick refreshing side salad to go with any of your summer meals? This one is Cucumber Tomato and Mozzarella Salad. The cucumber crunch to the tomato and mozzarella cheese's sweetness with the oil and vinegar marry together perfectly.

- 1 large cucumber, peeled and diced
- 10 oz contianer cherry or grape tomatoes
- 8 oz pearled mozzarella cheese
- 1/2 tablespoon avocado oil (or any oil of your choice)
- 1 tablespoon red wine vinegar (or any vinegar of your choice )
- salt (to taste)
- black pepper (to taste )
- 3–4 fresh basil leaves, chopped
Instructions
- In a medium bowl, place cucumber, cherry, or grape tomatoes, pearled mozzarella, avocado oil, red wine vinegar, salt, black pepper, and chopped fresh basil leaves.
- Mix well and serve immediately.
