Need a quick refreshing side salad to go with any of your summer meals? This one is Cucumber Tomato and Mozzarella Salad. The cucumber crunch to the tomato and mozzarella cheese’s sweetness with the oil and vinegar marry together perfectly.

When it comes to summer salads are my go to. Many associate salads as extremely healthy and boring, which is not the case. Salads can be very healthy and not boring at all. By dressing them up right with lots of veggies, a little dressing, and some healthy proteins.

I’ve been making this one for the family and everyone likes it. For sure this salad is going to be in repeat through this summer.

Ingredients to make Cucumber Tomato and Mozzarella Salad

Let’s start making Cucumber Tomato and Mozzarella Salad

Ingredients

  • Cucumber
  • Cherry or Grape Tomatoes– Here, you can use whichever tomato you have on hand or can find. Also, you can use regular tomatoes by dicing them into small pieces.
  • Pearled mozzarella cheese– This type of mozzarella can sometimes be difficult to find, so if you can’t find it, you can also use regular mozzarella and cut it into smaller pieces.
  • Avocado oil– I like to use avocado oil, but you can use any oil you like or have on hand.
  • Red wine vinegar– I like to use red wine vinegar, but you can use any vinegar you like or have on hand.
  • Salt
  • Black pepper
  • Basil leaves

Instructions

  1. In a medium bowl, place cucumber, cherry, or grape tomatoes, pearled mozzarella, avocado oil, red wine vinegar, salt, black pepper, and chopped fresh basil leaves. 
  2. Mix well and serve immediately.

  • 10 oz contianer cherry or grape tomatoes
  • 8 oz pearled mozzarella cheese
  • 1/2 tablespoon avocado oil (or any oil of your choice)
  • 1 tablespoon red wine vinegar (or any vinegar of your choice )
  • salt (to taste)
  • black pepper (to taste )
  • 34 fresh basil leaves, chopped


Instructions

  1. In a medium bowl, place cucumber, cherry, or grape tomatoes, pearled mozzarella, avocado oil, red wine vinegar, salt, black pepper, and chopped fresh basil leaves.
  2. Mix well and serve immediately.
