- 1 pounds beef chuck roast ( cut into 1-inch pieces )
- 3–4 medium potatoes (cut into 1/2–1 inch pieces )
- 4–5 celery stalks (cut into 1/2–1 inch pieces )
- 3–4 medium carrots (cut into 1/2–1 inch pieces )
- 1 medium onion (sliced)
- 2 cups sliced mushrooms
- 3/4 cup barley
- 2 tablespoons tomato paste
- 1 bay leaf
- 1 teaspoon salt
- 1 teaspoon black pepper
- 6–7 cups beef broth (or you can use any broth you like.)
Instructions
- In a medium pan over high heat, you want the pan to be hot. Add a little oil, sear the beef chuck roast for 2-3 minutes on each side.
- Add beef chuck roast, potatoes, carrots, celery, sliced onion, mushrooms, barley, tomato paste, bay leaf, salt, black pepper, and beef broth in the slow cooker.
- Mix well; cook on low for 7-8 hours or on high for 4-5 hours. Until the vegetables are soft and the beef chuck roast almost falls apart.
