  • Beef chuck roast– You want to cut the beef into about 1 inch pieces.
  • Potatoes
  • Celery
  • Carrots
  • Onion
  • Mushrooms
  • Barley
  • Tomato paste– This is used to thicken the soup and gives it so much flavor.
  • Salt
  • Black pepper
  • Beef broth– I prefer to use beef broth but you can use any broth you have on hand.

Instructions

  1. In a medium pan over high heat, you want the pan to be hot. Add a little oil, sear the beef chuck roast for 2-3 minutes on each side
  2. Add beef chuck roast, potatoes, carrots, celery, onion, mushrooms, barley, tomato paste, bay leaf, salt, black pepper, and beef broth in the slow cooker.
  3. Mix well; cook on low for 7-8 hours or on high for 4-5 hours. Until the vegetables are soft and the beef chuck roast almost falls apart.

  • 45 celery stalks (cut into 1/21 inch pieces )
  • 34 medium carrots (cut into 1/21 inch pieces )
  • 1 medium onion (sliced)
  • 2 cups sliced mushrooms
  • 3/4 cup barley
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 67 cups beef broth (or you can use any broth you like.)
