In need of a quick but hearty meal? This Ground Turkey and Veggie Soup are calling for you; with the turkey and beans’ as your filling protein, saute carrots and onions, giving it an amazing flavor. 

Soups are my absolute favorite dish to make. They are very forgiving; you don’t need to follow a recipe to the tee. You can add and take out any ingredient. If you have extra leftover veggies or meats at the end of the week, you can throw them into a pot with a good broth, and there you go.

I know summer is here but I really love this recipe, I could not wait till the winter to share. It’s very easy can be done in less than 30 minutes. Which makes it great go to meal for busy weeknights, where your super busy but still want a hearty home cooked meal.

Ingredients

  • Carrots
  • Onion
  • Ground Turkey
  • Salt
  • Black pepper
  • Vegetable broth
  • Canaille beans- You can use any white bean that you like.
  • Spinach

Instructions

  1. In a large pot over medium to high heat, add a little oil and saute carrots and onions; for 3-5 minutes until onions become translucent.
  2. Then add ground turkey, salt, and black pepper; cook until ground turkey is no longer pink.
  3. Then add veggie broth and canaille beans; bring to a boil, then to a simmer for 10-15 minutes.
  4. Turn the stove off, then add your spinach, mix until it starts to wilt.

  • 1 medium onion, diced
  • 1 pound ground turkey
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 6 cups veggie broth
  • 2 15 oz can canaille beans (or any white bean of your choice)
  • 23 cups spinach
