Description

In need of a quick but hearty meal? This one is calling for you; with the turkey and beans' as your filling protein, saute carrots and onions, giving it an amazing flavor.


Ingredients

Units Scale
  • 4 medium carrots, diced
  • 1 medium onion, diced
  • 1 pound ground turkey
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 6 cups veggie broth
  • 2 15 oz can canaille beans (or any white bean of your choice)
  • 23 cups spinach


Instructions

  1. In a large pot over medium to high heat, add a little oil and saute carrots and onions; for 3-5 minutes until onions become translucent.
  2. Then add ground turkey, salt, and black pepper; cook until ground turkey is no longer pink.
  3. Then add veggie broth and canaille beans; bring to a boil, then to a simmer for 10-15 minutes.
  4. Turn the stove off, then add your spinach, mix until it starts to wilt.
