- 4 medium carrots, diced
- 1 medium onion, diced
- 1 pound ground turkey
- 1 teaspoon salt
- 1 teaspoon black pepper
- 6 cups veggie broth
- 2 15 oz can canaille beans (or any white bean of your choice)
- 2–3 cups spinach
Instructions
- In a large pot over medium to high heat, add a little oil and saute carrots and onions; for 3-5 minutes until onions become translucent.
- Then add ground turkey, salt, and black pepper; cook until ground turkey is no longer pink.
- Then add veggie broth and canaille beans; bring to a boil, then to a simmer for 10-15 minutes.
- Turn the stove off, then add your spinach, mix until it starts to wilt.
