One day I had a lot of fresh jalapeños and not sure what to do with them. I could have made salsa, but my family doesn’t eat a lot of salsa. Also, I didn’t want the jalapenos to go bad, and be forced to throw them away.
I got to thinking, how about making muffins with the jalapeños? That’s exactly what I did. I also had a can of corn which I added to the muffins. Surprisingly the jalapenos and corn became a great pair.

Let’s start making Jalapeño and Corn Muffins
- Pre-heat oven to 375 degrees, line your muffin tins with paper liners, and set aside.
- In a small bowl place flour, baking powder, salt, sugar, and mix well; set aside.
- In a medium bowl place oil, milk, and eggs; mix well.
- To the milk mixture add diced jalapeno and corn; mix well.
- Slowly add flour mixture to the milk mixture; mix well and be careful not to over mix.
- Pour batter into prepared muffins tins, bake for 20-25 mins until toothpick comes out clean.
