Jalapeño and Corn Muffins

There is no disappointment here with these Jalapeño and Corn Muffins they are a bit spicy, sweet, and savory. You’ll be surprised by how delicious they are.

One day I had a lot of fresh jalapeños and not sure what to do with them. I could have made salsa, but my family doesn’t eat a lot of salsa. Also, I didn’t want the jalapenos to go bad, and be forced to throw them away.

I got to thinking, how about making muffins with the jalapeños? That’s exactly what I did. I also had a can of corn which I added to the muffins. Surprisingly the jalapenos and corn became a great pair.
