There is no disappointment here with these Jalapeño and Corn Muffins they are a bit spicy, sweet, and savory. You'll be surprised by how delicious they are.

			- 2 cups flour
 - 1 tablespoon baking powder
 - 1 teaspoon salt
 - 3/4 cup sugar
 - 1/4 cup oil
 - 1 cup milk
 - 2 eggs
 - 1 cup diced, fresh jalapeno
 - 1 15 oz can corn
 
Instructions
- Pre-heat oven to 375 degrees, line your muffin tins with paper liners, and set aside.
 - In a small bowl place flour, baking powder, salt, sugar, and mix well; set aside.
 - In a medium bowl place oil, milk, and eggs; mix well.
 - To the milk mixture add diced jalapeno and corn; mix well.
 - Slowly add flour mixture to the milk mixture; mix well and be careful not to over mix.
 - Pour batter into prepared muffins tins, bake for 20-25 mins until toothpick comes out clean.
