Description
Looking for a Simple Beef and Vegetable Soup tastes comforting and does not take all day to make. This soup is for you, makes a perfect weeknight dinner.

- 1 1/2 lbs beef stew meat
- 2 quarts water
- 1/4 onion
- 4–5 cloves garlic
- 2 teaspoons kosher salt (or regular table salt )
- 1 tablespoon dried parsley (or 2 tablespoons fresh parsley )
- 4 medium carrots, peeled and cut into 1/2 inch pieces
- 5–6 celery stalks, cut into 1/2 inch pieces
- 3 medium potatoes, cut into 1/2 inch pieces
Instructions
- In a 5-6 quart pot over high heat, add beef stew meat, water, onion, garlic cloves, kosher salt, and dried parsley.
- Cover then bring to a boil, then down to a simmer for 40 minutes still covered.
- Once the beef stew meat has been cooked for 40 minutes, take out onion, garlic cloves and discard.
- Add potatoes, cook for 5 minutes.
- Then add carrots and celery and cook for 15 minutes.
- After 15 mins check beef stew meat, it's done when beef is tender and shreds easily; if it's not, continue cooking until beef is done.
