Description

Looking for a Simple Beef and Vegetable Soup tastes comforting and does not take all day to make. This soup is for you, makes a perfect weeknight dinner.


Ingredients

Units Scale
  • 1 1/2 lbs beef stew meat
  • 2 quarts water
  • 1/4 onion
  • 45 cloves garlic
  • 2 teaspoons kosher salt (or regular table salt )
  • 1 tablespoon dried parsley (or 2 tablespoons fresh parsley )
  • 4 medium carrots, peeled and cut into 1/2 inch pieces
  • 56 celery stalks, cut into 1/2 inch pieces
  • 3 medium potatoes, cut into 1/2 inch pieces


Instructions

  1. In a 5-6 quart pot over high heat, add beef stew meat, water, onion, garlic cloves, kosher salt, and dried parsley.
  2. Cover then bring to a boil, then down to a simmer for 40 minutes still covered.
  3. Once the beef stew meat has been cooked for 40 minutes, take out onion, garlic cloves and discard.
  4. Add potatoes, cook for 5 minutes.
  5. Then add carrots and celery and cook for 15 minutes.
  6. After 15 mins check beef stew meat, it's done when beef is tender and shreds easily; if it's not, continue cooking until beef is done.
