Here is another recipe that my husband and I grew up with. Sopa de Fideo-Mexican Noodle Soup is very nostalgic, with lots of feelings of comfort.
This dish is one that our families would make a lot because it is inexpensive to make and feed many. Especially with many kids and money being tight, this dish became a frequent one.
It made me feel really good when I introduced this dish to the kids. I have made it before but that was a really long time ago, so they wouldn’t remember. They absolutely LOVED it, they wanted me to make it again.
What is great about this sopa (soup) is, it makes a great lunch. It’s light, not heavy, and pair it with a sandwich or quesadilla.
Here in the bottom picture is how the fideo pasta is supposed to look once it has browned.
Where do I find fideo pasta?
You can find fideo pasta in the Mexican section of your grocery store. It comes in 7-8 oz packages.
The tomato sauce that is used for this recipe is from my Red Rice. Do use this sauce because it gives it a much different flavor than regular tomato sauce.
Let’s start making Sopa de Fideo-Mexican Noodle Soup
- In a 4-5 Quart pot over medium heat, add oil, fideo pasta, and continuously mix for 3-4 minutes; you want to toast it until it’s lightly browned.
- Add tomato sauce, water, bullion (skip bullion is using broth), and mix; bring water or broth to a boil.
- Once it boils, bring it down to simmer and simmer for 10-15 until pasta is tender.
