Here’s a recipe on how to make Red Rice. It’s one of the first foods my mom taught me how to make. Actually it’s second to making flour tortillas (that will be on another post).

I have an aunt that would also make red rice. Did not like the way hers would taste. I don’t know exactly how she would make it. But I am sure she would only use regular tomato sauce those that come is the small cans.

I believe the secret to making good this rice is the sauce. Using whole peeled can tomatoes, a small piece of onion and one or two garlic cloves. You mix in the blender and you got yourself a good sauce for your rice.

Description

This is the most delicious red rice and easy to make.


Ingredients

Units Scale
  • 1 15oz can whole peeled tomatoes
  • small piece of onion (1/8 of an onion)
  • 12 garlic cloves (depending on size)
  • 2 cups white long grain rice
  • 2 tablespoon oil
  • 3 1/2 cups water or chicken broth
  • 1 1/2 tablespoon bouillon (I use the powder bouillon not the cubes but most definitely you could use the cubes.)


Instructions

  1. Rinse well 2 cups of white long grain rice.
  2. Set aside while you make the sauce.
  3. In a blender add the can of whole peeled tomatoes, small piece of onion and the 1-2 garlic cloves and blend until combined leave no chucks.
  4. In a 2 qt sauce pan heat 2 tablespoons of oil, medium to high heat.
  5. Add your white rice and brown for about 10 mins, stir constantly so it does not burn.
  6. Once its brown lower the heat to low add your tomato sauce and mix.
  7. Add your 3 1/2 cups of water or chicken broth.
  8. Raise heat medium to high.
  9. Add 1 1/2 tablespoons of bouillon, skip if using chicken broth.
  10. Once it comes to a full rolling boil bring down heat to low and cover.
  11. Leave covered for about 20-25 mins.

Notes

  • Skip the bouillon if using chicken broth.
  • Prep Time: 10 minutes
