This Super Simple Beef and Bean Burrito Recipe is just like the title says. With only a few ingredients, the ground beef mixed with the onions gives it a whole different flavor. Pair it with refried beans and topped with shredded cheese, it’s a whole different level.Â
Ingredients
2 tablespoons oil (any neutral oil, canola, vegetable, coconut, or avocado oil)
1 medium onion, diced
1 pound ground beef, I use 93/7 % fat, but you can use a higher percentage of fat if you like. Be sure to remove any excess fat after cooking the beef if using a higher fat percentage of ground beef.
1 1 oz taco seasoning package
3/4 cup water
1 30-oz can refried beans or refried pinto beans
1 cup shredded cheddar cheese (depends on how much cheese you put inside your burrito)
10-12 soft taco tortillas or homemade flour tortillas
Instructions
- In a medium pan over medium to high heat, add oil, and once the oil is hot, add onions and ground beef, beginning to break apart with a meat chopper; cook for 8-10 minutes until the ground beef is browned.
- Once the ground beef is fully cooked, add the taco seasoning packet and water; mix well. Bring to a boil, then down to a simmer for 10 minutes.Â
- In another pan or pot over medium to high heat, place refried beans and heat them through.
- In a medium skillet over medium to high heat, begin heating the tortillas for 15-20 seconds on each side; you want them to be pliable.
- Let’s begin to assemble the burritos; on a tortilla, place a spoonful or two of refried beans, then a spoonful of or two of ground beef, then sprinkle shredded cheese; begin to roll it into a burrito.
