I have always loved cabbage, even my mom knew. Whenever she would make soup, she would add big pieces of cabbage and she would always save me a piece. I mean she would cut the cabbage into big wedges.
What’s great about cabbage you can eat it raw and cooked. With just one head of cabbage you can get a few meals out of it. So it’s a great vegetable that you can make stretch. This Sweet and Sour Bean and Cabbage Salad is a great quick side dish for any occasion. Actually I have been enjoying this salad just as is. I also have been making this salad as a side dish for the kids with popcorn chicken. To be honesty I was a bit surprised that the kids enjoyed it but they did.
Oh, another way I have been eating this salad, I have been adding it to a bed of romaine lettuce. It’s absolutely delicious can not have enough of it.

Description
This salad is easy to put together with few ingredients and it full of flavor.
Ingredients
- 1/4–1/2 head green cabbage, shredded
- 1/4–1/2 head purple cabbage, shredded
- 1 15 oz can garbanzo beans
- 1 15 oz can black beans
- 1 15 oz can kidney beans
- 3 tablespoon maple syrup
- 2 tablespoon apple cider vinegar
- 2 tablespoon olive oil (or any oil of your choice)
- 1/4 cup dijon mustard
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- In a big bowl add maple syrup, apple cider vinegar, olive oil, dijon mustard, salt and black pepper, mix well.
- Then add shredded green cabbage and shredded purple cabbage, give a toss.
- Then add your beans and give a mix and enjoy.
