Wow! I can’t believe the 4th of July is around the corner. This year has been one heck of a year and we still have 6 months to go. Here I have the perfect side, Yukon Gold Potato Salad to go with your barbecue.

Growing up the city park was right in front of our house. When the 4th of July came around the fireworks show would be held at the park, so we never had to go anywhere but just take a seat in our yard and enjoy the show. We would have family over and my mom would the typical hot dogs and other barbecue foods.

Now with my own family, my husband and I have not come up with a tradition for the 4th of July, each year is different. Here where we live it just gets too hot to barbecue outside. So we try to come up with foods that we can make inside but still have that 4th of July feel.

Ingredients to make Yukon Gold Potato Salad

This Yukon Gold Potato Salad is so easy to make and the taste is unbelievable.

For this potato salad, I like to use the Yukon gold potatoes because they are creamy. The purple cabbage and carrots give it a bit of color because ultimately we do eat with our eyes.

Description

This potato salad is perfect for any family barbecue. It's easy to make and the taste is unbelievable.


Ingredients

Units Scale
  • 2 lbs Yukon gold golden potatoes
  • 1 cup shredded carrots
  • 1 cup shredded purple cabbage
  • 3 green onions, chopped
  • 1/2 cup mayo
  • 1 teaspoon salt
  • 1/21 teaspoon black pepper


Instructions

  1. In a pot place potatoes, fill to top with water and bring to a boil. Once it boils bring down to a simmer.
  2. Drain water from potatoes, rinse with cold water to cool down.
  3. Cut potatoes into small pieces.
  4. In a big bowl mix cooked potatoes, shredded carrots, shredded purple cabbage, chopped green onions, mayo, salt, and pepper.
