Chickpea “Tuna” Salad

Chickpeas also known as garbanzo beans are my favorite type of bean. When I was younger my mom would buy fresh garbanzo beans that would still be on the bush. There would be someone that would sell them outside of our church in bundles. This is how I was first introduced to them.

We would go home and take them off the stems and my mom would toast them in there pods on a cast iron skillet. I absolutely loved it, it would taste so good.

As I got older I found out that the garbanzo bean was also called chickpea. Fresh or dry these are my absolute favorite type of bean. 

One day I was trying to figure out how can I incorporate more beans into my family’s diet but also for them to enjoy it. At the time it was summer, so summers here in the desert in Southern California can be very hot it also is very difficult to cook anything because it gets the house very hot.  So I bought a couple cans of garbanzo beans and celery, I already had mayo, salt, pepper, and garlic powder. Put all together and just like tuna, I made Chickpea “tuna” salad sandwiches. The kids really enjoyed, they kept tell me how good the sandwiches were. 

Chickpeas
Diced celery and mayo
Salt, pepper, and garlic powder

Chickpea “Tuna” Salad

  • 2 cans of garbanzo beans
  • 1 cup diced celery
  • 1/2 cup mayo
  • salt to taste
  • pepper to taste
  • garlic powder to taste
  1. Open garbanzo bean drain and rinse.
  2. In a bowl with a fork or potato masher mash the garbanzo beans about 3/4 of them.
  3. Add diced celery and mix.
  4. Add mayo and mix.
  5. Then add salt, pepper, and garlic powder to taste.
  6. Then assemble into sandwiches and enjoy.
