This potato salad is perfect for any family barbecue. It's easy to make and the taste is unbelievable.

- 2 lbs Yukon gold golden potatoes
- 1 cup shredded carrots
- 1 cup shredded purple cabbage
- 3 green onions, chopped
- 1/2 cup mayo
- 1 teaspoon salt
- 1/2–1 teaspoon black pepper
Instructions
- In a pot place potatoes, fill to top with water and bring to a boil. Once it boils bring down to a simmer.
- Drain water from potatoes, rinse with cold water to cool down.
- Cut potatoes into small pieces.
- In a big bowl mix cooked potatoes, shredded carrots, shredded purple cabbage, chopped green onions, mayo, salt, and pepper.
