Cinco de Mayo is tomorrow, wow I can’t believe we are in May. Not sure how many people will be celebrating this year. If you are in the mood of making something for Cinco de Mayo here I have made Green Chile Tacos.
This year has been a whirl wind so far, with this virus not letting up. People getting restless staying home not being able to go places. Where we live we are mandated to wear masks when out in public. It was supposed to be only until May 1 but now has been extended to June 19. Seeing how many people lost their lives makes me sad.
Ok now lets get back to talking about something uplifting, food. These Green Chile Tacos are delicious, the ingredients are amazing together making these tacos the best you’ve ever had.
Let’s start making these delicious tacos.
Can’t stress enough how much I love my slow cooker, it does all the work how can you not love it. As for these tacos, I like to use boneless beef chuck, it shreds so easily.
Place 2 lbs boneless beef chuck in the slow cooker. Add one 28 oz can of green chile enchilada sauce, 1 tablespoon garlic powder, 1 teaspoon salt and 1/2 teaspoon ground cumin. Cook on low for 6-8 hours.
I like to top these tacos with some chopped onion and chopped cilantro.

Instructions
- Place boneless beef chuck, green chile enchilada sauce, garlic powder, salt and ground cumin in a slow cooker. Cook on low for 6-8 hours.
- Once the beef chuck shreds easily it is done.
