This Ground Beef and Vegetable Soup takes no time to make. It’s delicious with basic ingredients and very comforting.
This virus is still not letting up, making it difficult to live normally. When this does let up are we going to go back to living normally? Or is this social distancing and mask wearing going to be our new normal. Mentally will we be able to go back to normal? Only time will tell, it’s just mind boggling to see how bad this situation has gotten.
The only thing we can do is take care of our family and ourselves. One way I know how to do that is by feeding my family delicious and healthy foods.
This soup I have made many times and every time my kids tell me “wow mom that’s so good, can I have more?” or “wow mom that was so good, can you make it again?”.
What is great about this soup is, these ingredients are very common ingredients. You wouldn’t think it taste as good as it does.
Let’s start making Ground Beef and Vegetable Soup.
In a 5 quart pot heat a little oil. Sauté 1 diced medium onion and 3 minced garlic cloves, until translucent 3-5 mins. Add your 1 pound of ground beef and brown until no longer pink. Once ground beef is done add 6-8 cups of beef broth, 2 cans corn, 2 cans green beans, 1 can diced tomatoes and salt if needed. If using store bought beef broth sometimes I feel it needs a little salt.
With this soup I like to pair it up with white rice. When I make the white rice I add no flavoring such as broth or bouillon, just plain.

Ingredients
- 1 lb ground beef
- 1 medium onion
- 3 garlic cloves
- 2 15 oz can corn
- 2 15 oz can green beans
- 1 15 oz can diced tomatoes
- 6–8 cups beef broth (more or less depending how much broth like)
- salt to taste
Instructions
- In a 5 quart pot with a little oil, saute diced onion and garlic cloves; until translucent.
- Then add ground beef and brown until no longer pink.
- Add beef broth, corn, green beans, diced tomatoes and salt to taste.
- Bring to a boil and simmer for 10-15 mins.
