I find it to be a lot easier to find a vegetable that you can fill with a filling that everyone likes. Ground turkey is a great source of protien, the black beans are filling, and the pasta makes it taste great.
These stuff bell peppers have been on repeat these past couple weeks. Honestly, I was quite surprised how much my family really this recipe. I did not have put up a fight for them to try it.

Let’s start making Ground Turkey Stuffed Bell Peppers
Ingredients
- Bell peppers– You can use any color of bell peppers.
- Ground turkey
- Salt– You will only need enough to season the ground turkey.
- Black pepper– You will only need enough to season the ground turkey.
- Broth– You can use any type of broth of your choice.
- Pasta orzo
- Black beans
- Panko-The panko gives it more of a crunch. If you dont have panko, you can use plain bread crumbs will would just as good.
- Parsley– You can use fresh parsley or dried, whatever you have on had.
Instructions
- Preheat oven to 400 degrees.
- Cut the tops off the bell pepper, and then remove seeds.
- Place clean bell peppers in a 13×9 baking dish, bake for 15 minutes.
- In a medium pan, add a little oil, season ground turkey with salt and pepper, cook for 3-5 minutes until no longer pink. Remove any excess liquid from the ground turkey.
- Add broth and pasta orzo to the ground turkey; mix and bring to a boil, then down to a simmer and cover for 15 minutes until pasta has cooked.
- In a small bowl, place panko and parsley; mix well and set aside.
- Once the pasta has cooked, turn the stove off and add the black beans; mix well.
- Begin filling the bell peppers to the top. Top the bell peppers with the panko mix. Place bell peppers back into the baking sheet and bake for 15 minutes until the tops begin to turn brown.
Tips
- These bell peppers cooked on the crunchy side. If you like your bell peppers more cooked, on the first bake, bake for an extra 10 minutes.
- When choosing your bell peppers, make sure they can stand. It makes it easier to fill without them tipping over.
