Description
Smooth, creamy, and cheesy are the first words that come to mind when you taste these Easy Cheesy Mashed Potatoes. Requires minimal ingredients and less than 30 minutes; you can’t beat that.

			- 2 lb russet potatoes (peeled and cut into small cubes, this helps them cook faster.)
 - 1/4 cup unsalted butter
 - 2 oz cream cheese
 - 1 cup shredded cheddar cheese
 - 1/2 teaspoon salt
 - 1/2 teaspoon garlic powder
 - 2–4 tablespoon milk
 - 2 teaspoon dried chives (or 1 tablespoon fresh chives)
 
Instructions
- Place potatoes in a medium pot; fill the pot with water enough to cover the potatoes.
 - Place pot over medium heat to high heat, boil, and then simmer for 10-15 minutes until potatoes are fully cooked.
 - Drain water from the potatoes, and place the potatoes back into the pot.
 - Add butter, cream, and shredded cheese while the potatoes are still hot; mix well.
 - Add salt, garlic powder, and milk (start with one tablespoon at a time, depending on how smooth you want); begin mashing with a potato masher.
 - Once it’s at your desired consistency, mix in your chives
 
Notes
- If you want really smooth mashed potatoes use a hand mixer to mix the mashed potatoes.Â
 - Any remaining mashed potatoes can be stored in an airtight container in the refrigerator for up to 3-5 days.
 - To reheat, add about 1 tablespoon of milk for each serving.
