Ingredients

  • Russet potatoes– I like to peel the skin off for this recipe to make it smoother, but you can definitely leave the skin on if you want.
  • Unsalted butter- I like to use unsalted butter because I can control the salt that is added to my dishes.
  • Cream cheese
  • Cheddar cheese- I like to use cheddar cheese because it gives it a nice color, but by all means, you can use whatever cheese you like as long as it melts.
  • Salt
  • Garlic powder
  • Milk- You do not need to use a lot of milk because the cream cheese makes it smooth. But you will need a little milk; add a tablespoon at a time until you get your desired consistency.

Instructions

  1. Place potatoes in a medium pot; fill the pot with water enough to cover the potatoes.
  2. Place pot over medium heat to high heat, boil, and then simmer for 10-15 minutes until potatoes are fully cooked.
  3. Drain water from the potatoes and place the potatoes back into the pot.
  4. Mix well with butter, cream, and shredded cheese while the potatoes are still hot.
  5. Add salt, garlic powder, and milk (start with one tablespoon at a time, depending on how smooth you want it); begin mashing with a potato masher.
  6. Once it’s at your desired consistency, mix in your chives

  • 1/4 cup unsalted butter
  • 2 oz cream cheese
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 24 tablespoon milk
  • 2 teaspoon dried chives (or 1 tablespoon fresh chives)

Notes

  • If you want really smooth mashed potatoes use a hand mixer to mix the mashed potatoes. 
  • Any remaining mashed potatoes can be stored in an airtight container in the refrigerator for up to 3-5 days.
  • To reheat, add about 1 tablespoon of milk for each serving.
