Step 1

In a 4-quart pot, heat oil on medium to high heat. Place onion and carrots, and sautee for 3-5 minutes until they become translucent.

Then add your sausage to the pot, and cook until no longer pink, about 5-10 minutes.

  • Italian sausage– You can use any sausage you like.
  • White long grain rice
  • Beef broth– You can use vegetable or chicken broth. Any kind of broth will work.
  • Fresh parsley– This one is optional, but I feel it gives it a great flavor and nice touch of color.

  5. When it’s done, serve it with chopped parsley. 

Notes

  • The remaining sausage and rice can be put in an airtight container and in the refrigerator for up to 3-5 days.
  • You can re-heat over the stovetop in a pot by adding a little bit of water, about one tablespoon, to a cup of the sausage and rice.
