Fall and pumpkin everything season is here, and I ABSOLUTELY LOVE IT. It’s my favorite time of year. The change of the weather from hot to cool always feels so refreshing. And now, being able to use my oven 24/7 is always exciting.

Ingredients
- All-purpose flour
- Rolling oats– If you have quick oats you can use that as well.
- Baking powder
- Salt
- Sugar– When buying sugar make sure it’s pure sugar cane.
- Pumpkin spice
- Ground cinnamon
- Pumpkin puree– When buying the pumpkin puree make sure it’s not the pumpkin pie filling.
- Eggs
- Unsalted butter– You can use salted butter if that’s what you have on hand or you prefer. I like to use unsalted because I can control the salt in my baking.
- Oil– You can use any kind of neutral oil like vegetable, canola, peanut or grapeseed oil.
Instructions
- Preheat the oven to 375 degrees. Grease or line your 8 x 8 -inch pan with parchment paper and set aside.
- In a medium bowl, place flour, rolling oats, baking powder, salt, sugar, pumpkin spice, and ground cinnamon; mix and set aside.
- In a different medium bowl, place pumpkin puree, eggs, melted butter, and oil; mix well.
- Slowly add the dry ingredients into the wet ingredients; mix well.
- Place the mixture into your prepared pan, and place the pan into your preheated oven for 25-30 minutes until the toothpick comes out clean.
