Here I have a healthy but very tasty snack. Quinoa Chocolate Balls, I promised you will not even notice there’s quinoa in it.
I really love how versatile quinoa can be, I compare it to rice it can be made savory or sweet. Its also a great make ahead grain, make a big batch on Sunday and you’ll have it ready for you during busy weekdays. Add it to salads, soups, burgers (veggie patties), and as you can see here desserts as well.
Quinoa Chocolate Balls
Ingredients
- 9 pitted medjool dates or 1 cup (soak dates in water if they are hard)
- 1 cup cooked quinoa
- 1/4 cup creamy peanut butter
- 1 tablespoons of cocoa powder
- 1 teaspoon of vanilla
Instructions
- Remove pit from dates.
- In a food processor add dates, cooked quinoa, creamy peanut butter, cocoa powder, and vanilla.
- Mix untill combine, may need to stop and scrape the sides.
- Roll into 1 inch balls using a small scoop or 2 spoons.
- Place in refrigerator for about 30 mins until firm.
