Growing up refried pinto beans were a staple in our household. And to be honest I never liked them, not until I became an adult. Maybe if my mom would have made this recipe, Refried Pinto Beans with Longaniza I would have enjoyed them.
There were many times I would say to myself “what Mexican does not like refried pinto beans”. Because refried pinto beans go on the side of every Mexican dish, I just didn’t understand how I did not like them. To my surprise none of my kids came out like me, not liking pinto beans. When bean burritos are on the menu they are all up for it.
For this recipe, I use Longaniza which is a similar sausage to chorizo. What I like about longaniza is that it’s not as grease as chorizo, the flavor is very similar, and is easier to tell when it’s fully cooked.
This recipe can be used as a side to many of your meals, you can also add cheese or it can also be the main course by making burritos with Homemade Flour Tortillas.
