When you have a big family sometimes it can be hard to find meals that everyone enjoys. My kids well their kids they can be picky and my husband well he can be a picky eater too at times and me well I love my veggies. So there are nights that I find myself preparing and cooking three different meals, it can get frustrating.
One of my absolute pet peeves is having leftovers, because nobody eats them. So I usually try to cook just enough food for that meal because if there is any leftover I’m postive it will stay in the refrigerator until to goes bad or until I have the courage to throw it away. I hate wasting food I believe its an absolute sin.
Also with a big family with one income it can also be tricky to find afforable but flavorful meals. There was this time that we were really short on money and I wanted to come up with something that was not ramen or hots dogs. So It came to me, how about sauting shredded cabbage and carrots and pairing it with some white rice. When I made it the kids where surprised how good it was and also my husband.
A head of cabbage will cost about $2 or $3 at the most, 3 loose carrots will cost less than $1 and a 1 pound bag of rice will cost you about $1.50. The seasoning’s I’m using most people have on hand.
Sautéd Cabbage and Carrots with White Rice
Ingredients
- 1/2 to 1 head of cabbage (depending on the size)
- 2 to 3 medium size carrots
- Garlic powder to taste
- Salt to taste
- Black pepper to taste
- 2 cups of white rice
- 4 cups of water
Instructions
- Wash white rice.
- In a 4 quart pot place rice with 4 cups of water.
- Let come to a full boil then cover and lower to low.
- Cook for 20 to 25 mins until fully cooked.
- Meanwhile shredd cabbage with a mandoline slicer (makes it easier to shredd) or you can use your knife.
- Shredd the carrots with a food processor (I feel it shredds carrots just prefectly).
- Heat pan with a little oil and saute cabbage and carrots for only 3-5 mins. Season with garlic powder, salt and black pepper to your taste. You don’t want to over cook the cabbage and carrots you want them to still have a crunch.
- Once rice is done serve with cabbage and carrots.
On a sidenote:
- The 2 cups of rice makes enough for 7 people. You can reduce to 1 cup or increase to 3 cups depending on how many people you will be feeding.
- This meal is a great weekday dinner, it will take you about 30 mins or less.
- The amount of cabbage and carrots can also be adjusted depending on the how many people you will be feeding.
