- 1 lb dried black beans
- 1 15 oz can fire-roasted tomatoes
- 1 15 oz can corn
- 1 green bell pepper, diced
- 1 medium onion, diced
- 2 teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon chipotle powder
- 6 cups vegetable broth
Instructions
- Soak black beans overnight or 8-12 hours.
- Place black beans, fire-roasted tomatoes, corn, green bell pepper, onion, salt, ground cumin, chipotle powder, and vegetable broth into a slow cooker.
- Cook on low for 7-8 hours or high for 4-5 hours; until beans are tender and fully cooked.
