  • 1 15 oz can corn
  • 1 green bell pepper, diced
  • 1 medium onion, diced
  • 2 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon chipotle powder
  • 6 cups vegetable broth


Instructions

  1. Soak black beans overnight or 8-12 hours.
  2. Place black beans, fire-roasted tomatoes, corn, green bell pepper, onion, salt, ground cumin, chipotle powder, and vegetable broth into a slow cooker.
  3. Cook on low for 7-8 hours or high for 4-5 hours; until beans are tender and fully cooked.
