Pancakes are a staple in this house, my kids absolutely love them. I make them just about every weekend. I love these Simple Fluffy Pancakes they come delicious every time.
When my kids were smaller I would buy the box of pancake mix just out of convenience. But I personally never like pancake mix from the box, it would taste a bit funky to me. There was a time the only pancake mix from a box I liked was a store brand name. I don’t remember the name of it.
I like to change it up by adding chocolate chips, making them healthier by making them out of wheat flour but sometimes all you need is just a simple basic pancake recipe.
These pancakes only require 6 ingredients, they are fluffy and light.

Description
These pancakes are fluffy and perfect to make on a slow weekend morning.
Ingredients
- 4 cups flour
- 1 tablespoon baking powder (plus 2 teaspoons baking powder)
- 1/3 cup sugar
- 1 teaspoon salt
- 2 eggs
- 3 1/2 cups milk
Instructions
- In a medium bowl place flour, baking powder, salt, and sugar; mix well and set aside.
- In another medium bowl place eggs and milk; mix well and let rest for about 10 mins.
- In a medium skillet add a little oil and heat skillet low to medium heat.
- Pour 1/3 cup of batter into skillet, brown on both side and only flip once.
- Add oil each time before you pour the batter. Repeat with the rest of the batter.
Notes
When measuring the flour make sure you fluff it up with a fork so it’s loose and not compact. And when you measure into the cup level the flour with the back of a knife. This gives a more accurate measurement.
