Eggs are the quickest breakfast you can put together on weekday mornings. Because no matter how you cook them over easy, scrambled, with veggies, or ham and cheese, they take no time to cook.
What to serve it with?
- You can serve it with a slice of toasted sourdough bread or any bread of your choice. By the way sourdough bread is my absolute favorite.

Let’s start making Easy Spinach, and Eggs with Parmesan Cheese
Ingredients
- Spinach– When I buy spinach I like to buy the one that comes in the box, because it seems to last longer and it already comes in the container.
- Eggs– I typically use large eggs but whatever size you have on hand works just fine.
- Salt
- Black Pepper
- Parmesan cheese– I like to grate my own cheese but the one that’s already grated works just the same.
Instructions
- In a medium pan over low to medium heat, place a little oil, then place spinach and cover with a lid. Allow the spinach to wilt a little about 2-3 minutes.
- Begin making four small wells in the spinach; crack an egg in each well then season with salt and pepper.
- Cook for about 5 minutes until the white part of the egg is cooked. It will go from transparent to a soild white. If you like your eggs to be fully cooked from the inside, cover the pan with a lid. That way it will cook completely from inside.
- Once it’s done divide into four equal portions, the spinach with the egg, and sprinkle 1/2 a tablespoon of parmesan cheese on each egg.
