This recipe here is one that my husband and I grew up with. I just gave it a small twist to it. Easy Zucchini and Corn, is easy and can be made in less than 15 minutes. The zucchini gives it a bit of a crunch, the corn is sweet, the tomatoes give it that tang, and the cheese well who does not love cheese.
When I first made this recipe for my kids, it brought a lot of fond memories. My mom would make it for us all the time, she would pair it with white rice. Also, I think is so interesting that my mother-in-law would also make this dish too. However, this is one dish my husband never care for when she would make it.
I made two adjustments to it. As for the zucchini, I did not cook all the way so there is was still a bit of a crunch to it. And I added some fire-roasted tomatoes to add a bit of color.
What to eat it with?
My favorite way to have it is, to pair it with white rice. Use it a side dish and pair it with anything you’ll like. I sometimes eat on its own.

Let’s start making Easy Zucchini and Corn
- In a medium pan over medium-high heat, saute zucchini for about 3 minutes, no need to add any oil the zucchini’s release plenty of water.
- Cover zucchini for about 2 minutes, so the zucchini can release its water.
- Then add corn, fire-roasted tomatoes, and salt; mix and cover for 3-4 minutes.
- Once heated through, add mozzarella cheese; give it a mix for the cheese to be well incorporated and melted.
Tips
- Be careful to not overcook your zucchini, you still want it to have a bit of a crunch.
