I remember my husband and I would walk to the grocery store. It wasn’t necessary to buy groceries; it was to buy a drink and something to eat. And he would always grab the prepared sandwiches you see in the deli section. His favorite sandwich was the egg salad one.

So this recipe has many fond memories for me. I’m so excited that the kids really liked this sandwich. It was just recently the first time my kids ever tasted it.

Let’s start making Egg Salad Sandwich.

Ingredients

  • Eggs
  • Mayo
  • Salt
  • Black Pepper

Instructions

  1. In a medium pot over high heat, place eggs and cover completely with water.
  2. Once eggs come to a boil, turn off the flame and cover the pot; leave them covered for 10 minutes.
  3. After 10 minutes have passed, place cooked eggs in a colander and rinse under cold water to cool them down.
  4. Begin peeling off the shells of the eggs.
  5. Once all eggs are peeled, dice them and place them in a medium bowl.
  6. In that same bowl, add mayo, salt, and black pepper; mix well.
  7. Adjust any of the seasonings if needed.

How to store this salad?

  • This salad keeps well in an airtight container for 2 days in the refrigerator.
